It is possible to have a folding roof (see Mythbuster's Cadillac), however having a removable, fixed roof useng the parts system would probably be easier and better for PC performance. All you really have to do is edit the shape to suit. The fullsize has all the same chassis specifications as what a car of this type would have in real life, so there's no problem there.
